Kosher Feijoada

A kosher adaptation of Brazil's national black bean stew, replacing pork with beef brisket, beef sausage, and other smoked kosher meats. The long simmer gives the beans a rich, smoky depth while preserving kashrut.

Ingredients

  • 1 lb dried black beans
  • 1 tbsp vegetable oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 1/2 lb beef brisket, cut into chunks
  • 12 oz kosher beef sausage, sliced
  • 8 oz smoked beef or pastrami ends, diced
  • 2 bay leaves
  • 1 tsp ground cumin
  • 1 tsp sweet paprika
  • 8 cups water or beef stock
  • 1 orange, halved (optional)
  • Salt and black pepper to taste
  • Cooked white rice, for serving

Instructions

    Soak the black beans overnight, then drain.

    Heat oil in a heavy pot and sauté the onion, garlic, and bell pepper until softened.

    Add the brisket, sausage, and smoked beef and cook until lightly browned.

    Stir in the beans, bay leaves, cumin, paprika, and water or stock.

    Bring to a boil, then reduce to a very gentle simmer; add the orange halves if using.

    Cook for 2 1/2 to 3 1/2 hours, stirring occasionally, until the beans are tender and the broth thickens.

    Season with salt and pepper, removing the orange and bay leaves before serving.

    Serve hot with rice and simple greens or orange slices on the side.

Kosher notes

Traditional pork products are omitted; use certified kosher beef sausages and smoked meats.
