Kreplach

Triangular dough pockets filled with meat or onions, common across Eastern European Ashkenazi communities and also part of Romanian Jewish cooking. They are often boiled and served in clear chicken broth, especially for festive or holiday meals.
Ingredients
- •2 cups all-purpose flour
- •2 large eggs
- •2 tbsp water
- •1/2 tsp salt
- •1 tbsp oil
- •3/4 lb ground beef or chicken
- •1 small onion, finely chopped
- •1 tbsp schmaltz or oil
- •1/2 tsp black pepper
- •1/2 tsp kosher salt
- •6 cups clear chicken broth, for serving

Make the dough by mixing the flour, eggs, water, salt, and oil until a smooth dough forms. Knead briefly, cover, and let rest for 30 minutes.

For the filling, sauté the chopped onion in schmaltz or oil until soft, then add the ground meat and cook until browned. Season with salt and pepper and cool completely.

Roll the dough out thinly on a lightly floured surface and cut it into 3-inch squares.

Place a small spoonful of filling in the center of each square.

Fold each square into a triangle and pinch the edges firmly to seal. If needed, moisten the edges with a little water.

Bring a pot of salted water to a gentle boil and cook the kreplach in batches for 4 to 6 minutes, until they rise and the dough is tender.

Meanwhile, heat the chicken broth in a separate pot.

Transfer the cooked kreplach to the hot broth and serve immediately.
Kosher notes
Use kosher meat and serve in kosher chicken broth. If making an onion-only filling, the dish can be adapted as pareve.
