A savory vegetable and cheese bake, often using eggplant, that is a staple of the Turkish Sephardic household for everyday meals and Shabbat.
Ingredients
- •2 medium eggplants, diced
- •1 cup feta cheese, crumbled
- •1 large onion, chopped
- •2 cloves garlic, minced
- •1 bell pepper, chopped
- •2 medium tomatoes, diced
- •2 eggs, beaten
- •1/4 cup olive oil
- •1 teaspoon paprika
- •1 teaspoon black pepper
- •Salt to taste
- •2 tablespoons fresh parsley, chopped
- •1/2 cup breadcrumbs (optional)
Instructions

Preheat the oven to 375°F (190°C).

In a skillet, heat olive oil over medium heat and sauté the onion until translucent.

Add garlic and bell pepper; cook until soft.

Stir in diced eggplant and tomatoes, and cook until the vegetables are tender and moisture has evaporated.

Remove from heat and mix in the feta cheese, beaten eggs, paprika, black pepper, and salt.

Transfer the mixture to a greased baking dish and sprinkle with breadcrumbs if using.

Top with fresh parsley for garnish.

Bake in the preheated oven for about 30-35 minutes, or until the top is golden and set.
