A Yemenite Jewish Sabbath bread baked overnight in a covered pot, with pull-apart layers and a deeply caramelized crust.

Ingredients

  • 4 cups bread flour
  • 1 tablespoon sugar
  • 2 teaspoons instant yeast
  • 1 1/2 teaspoons kosher salt
  • 2 large eggs
  • 1 cup warm water
  • 1/2 cup margarine or neutral oil

Instructions

    Mix the flour, sugar, yeast, salt, eggs, water, and half the fat into a soft dough.

    Knead until smooth, then let rise until doubled.

    Divide into balls, dip or coat them with the remaining margarine, and arrange in a greased covered pot.

    Let rise again until puffy.

    Bake low and slow until the bread is cooked through and deeply browned.

Kosher notes

Use pareve margarine to keep it suitable for meat meals.
