Persian minced meat skewers, valued for their delicate texture and onion-rich flavor. In a Jewish Persian context they are served with rice, grilled vegetables, and sumac.

Ingredients

  • 1 pound ground lamb or beef
  • 1 medium onion, very finely grated and squeezed dry
  • 1 teaspoon sumac, plus more for serving
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon turmeric
  • 1 tablespoon oil, if needed for binding

Instructions

    Combine the ground meat, grated onion, sumac, salt, pepper, and turmeric in a bowl.

    Knead the mixture thoroughly for several minutes until it becomes sticky and well bound.

    Chill the meat mixture for 20 to 30 minutes to help it hold on the skewers.

    With wet hands, press the meat around flat metal skewers in long even strips.

    Grill over medium-high coals or broil, turning carefully, until browned and just cooked through.

    Serve immediately with rice, grilled tomatoes, and extra sumac.
