Kuku Sabzi

A herb-packed Persian frittata, vivid green and fragrant, served by many Iranian Jews at the Seder and on festive spring tables.
Ingredients
- •8 large eggs
- •1 cup chopped cilantro
- •1 cup chopped parsley
- •1 cup chopped dill
- •1/2 cup chopped chives or scallions
- •1/4 cup chopped walnuts, optional
- •2 tablespoons barberries, optional
- •1 teaspoon kosher salt
- •3 tablespoons oil
Instructions

Beat the eggs in a large bowl with the salt.

Stir in the chopped herbs, walnuts, and barberries if using.

Heat oil in a skillet or baking dish and pour in the mixture.

Cook gently on the stovetop or bake until set in the center.
