A Caucasian dumpling with a distinctive braided seal, filled with seasoned beef and commonly served with a sharp garlic-vinegar sauce. In Kavkazi Jewish cooking, kurze reflects the broader dumpling culture of the eastern Caucasus while following kosher meat preparation.

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 tsp kosher salt
  • 3/4 cup water
  • 1 tbsp vegetable oil
  • 10 oz ground beef
  • 1 small onion, grated
  • 2 tbsp chopped cilantro
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 tsp kosher salt, divided
  • 3 tbsp white vinegar
  • 2 cloves garlic, crushed
  • 1/4 cup warm water for sauce

Instructions

    Mix the flour and 1/2 teaspoon salt, then add the water and oil to form a firm dough; knead until smooth and let rest 30 minutes.

    In a bowl, combine the ground beef, grated onion, cilantro, pepper, paprika, and 1/2 teaspoon salt to make the filling.

    Roll the dough very thin and cut into 3-inch circles.

    Place a spoonful of filling in the center of each circle.

    Fold and pinch the dumplings closed using a pleated or braided motion along the top edge.

    Bring a wide pot of salted water to a boil and lower it to a steady simmer.

    Cook the dumplings until tender and the filling is fully cooked, about 7 to 9 minutes.

    Make the dipping sauce by stirring together the vinegar, garlic, warm water, and remaining salt.

    Serve the hot dumplings immediately with the garlic-vinegar sauce on the side.

Kosher notes

Use kosher beef. The traditional sharp sauce is naturally pareve, so the dish remains meat without dairy accompaniment.
