Laham b'ajeen

Syrian Jewish flatbread topped with a thin layer of spiced ground meat, onions, and tomatoes, then baked until crisp at the edges. Often called Syrian pizza, it is served as a snack, mezze, or light meal.
Ingredients
- •1 lb prepared pizza dough or simple bread dough
- •1 lb ground beef or lamb
- •1 small onion, finely chopped
- •2 tomatoes, finely chopped and drained
- •2 tbsp tomato paste
- •2 tbsp olive oil
- •1 tsp kosher salt
- •1/2 tsp black pepper
- •1 tsp allspice or baharat
- •2 tbsp chopped parsley

Preheat the oven with a baking stone or sheet inside to a high temperature, about 475°F.

Mix the ground meat with onion, tomatoes, tomato paste, olive oil, salt, pepper, allspice, and parsley.

Divide the dough into small portions and roll each into a thin oval or round.

Spread a very thin layer of the meat mixture over each piece of dough.

Bake until the crust is cooked and the meat topping is browned, about 10 to 15 minutes.

Use kosher meat and avoid dairy toppings. Often served as part of a meat mezze spread.
