Grated potato pancakes that became a caloric staple among poorer Eastern Ashkenazi communities. In Russian and Ukrainian lands, the draniki style emphasizes finely grated potatoes fried until deeply crisp.

Ingredients

  • 2 pounds russet potatoes, peeled
  • 1 medium onion
  • 2 large eggs
  • 3 tablespoons all-purpose flour or matzo meal
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 cup neutral oil for frying

Instructions

    Grate the potatoes and onion on the fine side of a grater or in a food processor.

    Transfer the mixture to a clean towel and squeeze out as much liquid as possible.

    Place the squeezed potato mixture in a bowl and mix with the eggs, flour or matzo meal, salt, and pepper.

    Heat a thin layer of oil in a skillet over medium-high heat.

    Scoop small portions into the pan, flattening each into a thin pancake.

    Fry until the edges are very crisp and the underside is deep golden, about 3 to 4 minutes per side, then flip and finish the second side.

    Drain briefly on paper or a rack and serve hot.

Kosher notes

Oil keeps these latkes pareve and especially suitable for Hanukkah. If fried in schmaltz, they should be served only with a meat meal.
