Malida

A Bene Israel ceremonial sweet platter of flattened rice mixed with coconut, raisins, nuts, sugar, and rose petals, prepared especially for thanksgiving prayers honoring the Prophet Elijah. Though ritual in use, it is composed of simple pantry ingredients and served as a sweet offering and communal food.

Ingredients

  • 3 cups poha (flattened rice)
  • 1/2 cup grated fresh or desiccated coconut
  • 1/3 cup sugar or jaggery
  • 1/4 cup raisins
  • 1/4 cup chopped almonds or cashews
  • 2 tbsp rose water
  • 2 tbsp dried edible rose petals
  • 2 tbsp sesame seeds, optional
  • 1/4 tsp ground cardamom

Instructions

    Lightly dry-roast the poha in a large skillet for 2 to 3 minutes until crisp but not browned.

    Crush the poha gently by hand or pulse briefly so it breaks into smaller flakes.

    Combine the poha with coconut, sugar or jaggery, raisins, nuts, cardamom, and sesame seeds if using.

    Sprinkle over the rose water and toss until the mixture is fragrant and evenly moistened.

    Arrange the malida on a large platter or mound it decoratively for ceremonial presentation.

    Scatter the rose petals over the top just before serving.

Kosher notes

Naturally pareve if prepared without ghee or dairy. Check commercial rose petals and flavorings for kosher certification.
