A Passover adaptation of chilaquiles in which broken matzo is softened in salsa or tomato sauce and topped as desired.
Ingredients
- •6 sheets matzo, broken into pieces
- •2 cups salsa roja or tomato sauce
- •1 small onion, sliced
- •2 tablespoons oil
- •1/2 teaspoon kosher salt
- •1 avocado, sliced, optional
- •2 tablespoons chopped cilantro, optional
Instructions

Briefly moisten the matzo under running water so it softens slightly without turning mushy.

Cook the onion in oil until softened, then add the salsa and salt.

Stir in the matzo pieces and cook just until coated and tender at the edges.

Adjust the texture with a splash of water if needed.

Serve immediately, topped with avocado and cilantro if desired.
