Jerusalem mixed grill, a modern Israeli street-food specialty of chicken offal and meat seared with spices and often served in pita.

Ingredients

  • 1/2 pound chicken hearts
  • 1/2 pound chicken livers
  • 1/2 pound chicken spleen or dark meat chicken, chopped
  • 1 onion, sliced
  • 2 tablespoons oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon black pepper

Instructions

    Clean and trim the chicken hearts and livers, cutting them into bite-size pieces.

    Heat oil in a large skillet and cook the onion until lightly browned.

  3. 3

    Add the meats and sear over high heat until browned.

  4. 4

    Season with cumin, paprika, turmeric, salt, and pepper and continue cooking until just done.

    Serve immediately in pita or on a plate with tahini and pickles.

Kosher notes

Use only kosher poultry organs and meat, and thoroughly kasher livers according to halakhic practice before cooking.
