A rich dish of small meatballs simmered with fire-roasted eggplants and tomatoes, a favorite savory meal in pre-war Jewish households.

Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggplants
  • 4 tomatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 cup olive oil

Instructions

    Preheat your oven to 400°F (200°C).

    Cut the eggplants in half and score the flesh. Drizzle with olive oil and roast in the oven for 30-40 minutes until soft.

    While the eggplants are roasting, mix the ground beef, breadcrumbs, parsley, salt, pepper, and paprika in a bowl until well combined.

    Form the meat mixture into small balls, about 1 inch in diameter.

    In a large skillet, heat olive oil over medium heat. Add the meatballs and brown them on all sides, about 5-7 minutes.

    Remove the meatballs and set aside. In the same skillet, add onions and garlic, cooking until soft.

    Once the eggplants are roasted, scoop out the flesh and add it to the skillet along with the diced tomatoes and the meatballs.

    Simmer everything together for about 20 minutes, allowing the flavors to meld. Adjust seasoning as needed.
