Spiced Sephardic nut cookies, often shaped into small pyramids or domes, representing the Ladino-speaking influence within Argentine Jewish life. They are fragrant with warm spices and rely on ground nuts rather than wheat-heavy dough.

Ingredients

  • 2 cups ground walnuts or almonds
  • 3/4 cup sugar
  • 2 egg whites
  • 1 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1 tsp lemon zest
  • 1 tbsp honey
  • Pinch of kosher salt
  • Powdered sugar for dusting

Instructions

    Preheat the oven and line a baking sheet with parchment.

    Combine the ground nuts, sugar, cinnamon, cloves, lemon zest, and salt in a bowl.

    Stir in the egg whites and honey until a thick, moldable paste forms.

    With damp hands, shape the mixture into small pyramids or pointed mounds.

    Arrange on the baking sheet with a little space between them.

    Bake at 325°F (165°C) until set and fragrant but not overly dark.

    Cool completely so the cookies firm up.

    Dust lightly with powdered sugar before serving.
