An egg-based creamy spread served with matzah for Passover. The preparation relies on vigorously beaten eggs, especially whites, to create an airy, marshmallow-like texture for festive use.

Ingredients

  • 4 large eggs, separated
  • 1/2 cup sugar
  • 1 tsp lemon juice
  • 1 pinch kosher salt
  • matzah for serving

Instructions

    Carefully separate the eggs, placing the whites in a very clean mixing bowl and reserving the yolks if desired for another use.

    Add a pinch of salt and the lemon juice to the egg whites.

    Begin beating the whites with a whisk or mixer until foamy.

    Gradually add the sugar while continuing to beat.

    Whip until the mixture becomes thick, glossy, and marshmallow-like in texture.
