MoroccoSephardiPurim Pareve 60 min 8 servings Medium

A symbolic Purim bread from the Moroccan Jewish tradition, made from sweet yeast dough enriched with nuts and decorated with two hard-boiled eggs to represent Haman's eyes. It is baked for the holiday and ceremonially torn apart at the table.

Ingredients

  • •4 cups all-purpose flour
  • •2 1/4 tsp active dry yeast
  • •1/4 cup sugar
  • •1 tsp kosher salt
  • •1 cup warm water
  • •1/4 cup olive oil
  • •1/2 cup chopped walnuts or almonds
  • •2 whole hard-boiled eggs
  • •1 egg, beaten, for glaze
  • •1 tsp sesame seeds, optional

Instructions

  1. 1

Combine the yeast, warm water, and a pinch of sugar and let stand until foamy, about 10 minutes.

  2. 2

Mix in the remaining sugar, flour, salt, and olive oil to form a soft dough, then knead until smooth.

  3. 3

Work the chopped nuts into the dough during the last minute of kneading.

  4. 4

Cover and let the dough rise until doubled, about 1 hour.

  5. 5

Shape the dough into an oval or face-like loaf and place it on a lined baking tray.

  6. 6

Press the two hard-boiled eggs firmly into the top to resemble eyes.

  7. 7

Brush the loaf with beaten egg and sprinkle with sesame seeds if desired.

  8. 8

Bake at 375°F (190°C) for 30 to 35 minutes until golden brown and hollow-sounding when tapped.

  9. 9

Cool slightly and serve by tearing apart at the table in the Purim custom described in the source.
