Oshi Bakhsh

A vividly green Bukharian Jewish rice dish perfumed with large quantities of cilantro and dill, often prepared with ground beef or lamb. The herbs color and scent the rice, making it one of the signature dishes of Bukharian cuisine.
Ingredients
- •1 lb ground beef or lamb
- •2 tbsp vegetable oil
- •1 large onion, chopped
- •2 cups long-grain rice, rinsed
- •2 cups chopped cilantro
- •1 1/2 cups chopped dill
- •4 cups stock or water
- •1 tsp kosher salt
- •1/2 tsp black pepper
- •1/2 tsp ground cumin
Instructions

Heat the oil in a pot and sauté the onion until softened.

Add the ground meat and cook until browned, breaking it up into small pieces.

Stir in the cilantro, dill, salt, pepper, and cumin and cook just until the herbs wilt.

Add the rinsed rice and stir gently to coat it in the herb mixture.

Pour in the stock or water and bring to a boil.

Reduce the heat to low, cover tightly, and cook for 20 minutes until the rice is tender.

Rest the pot off the heat for 10 minutes, then fluff with a fork.

Serve warm as a Shabbat rice dish or main course.
Kosher notes
Fleishig when made with beef or lamb. Can be adapted with more herbs and less meat, but this version follows the source profile.
