Pan de Semita

A semolina bread studded or coated with sesame seeds, reflecting long Sephardic bread traditions adapted in Mexico. Its firm crumb and nutty flavor make it suitable for Sabbath tables or everyday sandwiches.

Ingredients

  • 3 cups semolina flour
  • 1 cup bread flour
  • 2 1/4 tsp active dry yeast
  • 1 tbsp sugar
  • 1 1/2 tsp kosher salt
  • 1 1/2 cups warm water
  • 2 tbsp olive oil
  • 1/3 cup sesame seeds
  • 1 egg white or water, for brushing

Instructions

    Combine the yeast, sugar, and warm water and let it stand until foamy.

    Mix in the semolina flour, bread flour, salt, and olive oil to form a shaggy dough.

    Knead until the dough is smooth and elastic, then let it rise until doubled.

    Shape into 1 large loaf or 2 smaller loaves and place on a baking tray.

    Brush the tops with egg white or water and cover generously with sesame seeds.

    Let the loaves proof again until puffy.

    Bake at 400°F (200°C) until golden and hollow-sounding when tapped.

    Cool before slicing so the crumb sets properly.

Kosher notes

Usually pareve; use water rather than milk and brush with water if avoiding egg wash.
