Passover Gondi

A kosher-for-Passover adaptation of Persian Jewish gondi, sometimes described as a Persian matzo ball. Matzo meal replaces chickpea flour while preserving the dish's signature perfume of cardamom and turmeric.

Ingredients

  • 1 pound ground chicken
  • 3/4 cup matzo meal
  • 1 small onion, finely grated
  • 2 large eggs
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon black pepper
  • 1 1/2 teaspoons kosher salt
  • 8 cups kosher-for-Passover chicken broth
  • 2 tablespoons chopped parsley

Instructions

    In a large bowl, combine the ground chicken, matzo meal, onion, eggs, cardamom, turmeric, pepper, and salt.

    Mix and knead until the mixture becomes cohesive, then let it stand for 15 minutes so the matzo meal absorbs moisture.

    Form the mixture into medium dumplings with damp hands.

    Bring the kosher-for-Passover chicken broth to a gentle simmer in a large pot.

    Add the dumplings carefully, cover partially, and poach over low heat until cooked through, about 30 minutes.

    Skim if needed, adjust seasoning, and sprinkle with parsley before serving in broth.

Kosher notes

Suitable for Passover when all packaged ingredients, especially matzo meal and broth, are certified kosher for Passover.
