Hand-molded meat pies with a thin crust and sesame seeds, often called the 'kernel' of Salonikan identity by food historians.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup olive oil
  • 1/2 cup lukewarm water
  • 1 teaspoon salt
  • 1 pound ground beef or lamb
  • 1 onion, finely chopped
  • 1/4 cup parsley, chopped
  • 1 teaspoon ground cinnamon
  • 1 teaspoon black pepper
  • 1 egg, beaten (for egg wash)
  • Sesame seeds for sprinkling

Instructions

    In a bowl, combine flour and salt. Mix in olive oil until crumbly.

    Slowly add lukewarm water and mix until a dough forms. Knead for a few minutes, then cover with a cloth and let rest for 30 minutes.

    In a skillet, heat oil and sauté onion until translucent. Add ground meat and cook until browned.

    Stir in parsley, cinnamon, and pepper. Remove mixture from heat and let cool.

    Preheat the oven to 375°F (190°C).

    Roll out the dough thinly on a floured surface. Cut into circles (about 6 inches in diameter).

    Place a spoonful of the meat mixture in the center of each circle. Fold over and seal the edges by pressing with a fork.

    Place the filled pastries on a baking sheet. Brush with beaten egg and sprinkle sesame seeds on top.

    Bake for 25-30 minutes, or until golden brown.

    Serve warm or at room temperature.
