Pastelitos
Delicate Sephardic pastries filled with nuts and finished with honey syrup. In Ottoman Jewish homes they were especially associated with festive occasions such as Purim, and their small shape made them ideal for serving on sweet trays.
Ingredients
- •2 1/2 cups all-purpose flour
- •1/2 teaspoon kosher salt
- •1/2 cup vegetable oil
- •1/2 cup water
- •1 teaspoon vinegar or lemon juice
- •1 1/2 cups finely ground walnuts or almonds
- •1/3 cup sugar
- •1 teaspoon ground cinnamon
- •3/4 cup honey
- •1/4 cup water for syrup
- •1 teaspoon orange blossom water, optional
Instructions

Make the dough by mixing the flour, salt, oil, water, and vinegar into a soft dough; knead briefly until smooth.

Cover and let the dough rest for 20 minutes.

Mix the ground nuts with the sugar and cinnamon for the filling.

Roll the dough thinly and cut into small squares or circles.

Place a spoonful of filling on each piece, fold into triangles or half-moons, and seal the edges well.

Arrange on a baking tray and bake at 350°F until lightly golden and crisp, about 25 minutes.

Meanwhile, warm the honey with the water and orange blossom water to make a thin syrup.

Drizzle or briefly soak the baked pastries with the syrup and let them cool before serving.
Kosher notes
Pareve when made with oil rather than butter, making them suitable for serving after meat meals as holiday sweets.
