A seasonal German Jewish plum sheet cake made with yeast dough and densely packed prune plums. In Jewish homes it marked late summer and early autumn and was especially associated with the sweet themes of Rosh Hashana.

Ingredients

  • 3 1/4 cups all-purpose flour
  • 2 1/4 teaspoons active dry yeast
  • 3/4 cup lukewarm water
  • 1/4 cup sugar
  • 1/4 cup neutral oil
  • 1/2 teaspoon kosher salt
  • 2 pounds Italian prune plums, halved and pitted
  • 2 tablespoons breadcrumbs or ground nuts
  • 1 teaspoon cinnamon
  • 2 tablespoons honey or sugar for finishing

Instructions

    Stir the yeast into the lukewarm water with a spoonful of the sugar and let it bloom for 5 minutes.

    Mix the flour, remaining sugar, and salt in a bowl, then add the yeast mixture and oil to form a soft dough.

    Knead until smooth, cover, and let rise until doubled, about 1 hour.

    Roll or press the dough into a greased sheet pan or rectangular baking dish.

    Sprinkle the surface lightly with breadcrumbs or ground nuts to absorb fruit juices.

    Arrange the halved plums very closely over the dough, cut side up or slightly angled.

    Dust with cinnamon and drizzle lightly with honey or sprinkle with sugar.

    Bake at 375°F (190°C) until the dough is set and the plums are tender and slightly caramelized, 35 to 40 minutes.

    Cool until warm or room temperature before cutting into squares.

Kosher notes

Often prepared pareve with oil so it can be served after meat meals during the holiday season.
