IranMizrahiShabbat Pareve 50 min 6 servings Easy

A Sabbath-associated Persian Jewish rice pilaf prepared in advance and slowly steamed for the Friday night meal. It is less a single fixed formula than a Shabbat style of rice preparation.

Ingredients

  • •2 cups basmati rice
  • •3 tablespoons oil
  • •1 teaspoon turmeric or other preferred Shabbat seasoning
  • •1 tablespoon chopped fresh herbs such as dill or parsley
  • •1 1/2 teaspoons kosher salt
  • •3 cups water

Instructions

  1. 1

Rinse the rice well until the water runs mostly clear.

  2. 2

Bring the rice and salted water to a boil, then reduce to a gentle simmer for several minutes until partially cooked.

  3. 3

Drain if needed and return the rice to a heavy pot with the oil, turmeric, and herbs.

  4. 4

Cover the lid with a towel and place it tightly on the pot.

  5. 5

Steam over very low heat until the grains are tender and separate, about 30 to 40 minutes.
