A traditional cold Ashkenazi appetizer of richly seasoned meat jelly, made by slowly simmering collagen-rich bones until the broth sets when chilled.

Ingredients

  • 3 pounds calf's feet or beef knuckle bones
  • 1 large onion, quartered
  • 6 garlic cloves
  • 2 carrots, chopped
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 bay leaf
  • 10 cups water

Instructions

    Rinse the bones well and place them in a large pot with onion, garlic, carrots, bay leaf, salt, pepper, and water.

    Bring to a boil, skim the foam, then lower to a very gentle simmer.

    Cook for 4 to 5 hours until the broth is rich and gelatinous and the meat is tender.

    Strain the broth, pick any edible meat from the bones, and adjust seasoning with extra garlic or salt if needed.

    Pour into shallow dishes with the meat, cool, then refrigerate until firmly set before serving cold.

Kosher notes

Use only kosher-slaughtered beef or veal bones and avoid mixing with dairy side dishes.
