Ptitim

Israeli toasted wheat pasta, often nicknamed Israeli couscous, created in the early state period as a rice substitute and now used in salads and side dishes.

Ingredients

  • 2 cups ptitim
  • 1 tablespoon olive oil
  • 3 cups water or vegetable broth
  • 1 teaspoon kosher salt
  • 1 tablespoon chopped parsley
  • 1 tablespoon lemon juice, optional

Instructions

    Heat the olive oil in a saucepan and toast the ptitim for a minute if it is not pre-toasted.

    Add the water or broth and salt and bring to a boil.

    Reduce the heat, cover, and simmer until the pasta is tender and the liquid is absorbed.

    Fluff with a fork and stir in parsley and lemon juice if using.

    Serve warm as a side or cool for salad.

Kosher notes

Usually pareve and highly adaptable to meat or dairy menus.
