Quiche à l’oignon

A kosher adaptation of the Alsatian-German onion tart. Jewish cooks omitted pork and often used a non-dairy crust, relying on slowly cooked onions and eggs for a rich but kashrut-compliant filling.

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1/3 cup olive oil or other neutral oil
  • 3 tablespoons cold water
  • 4 large onions, thinly sliced
  • 2 tablespoons oil
  • 3 large eggs
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon grated nutmeg
  • 1 tablespoon flour or matzo meal for thickening

Instructions

    Preheat the oven to 375°F (190°C).

    Mix the flour and salt for the crust, then stir in the oil and cold water until a dough forms.

    Press the dough into a tart pan and chill it while preparing the filling.

    Heat the oil in a wide pan and cook the sliced onions slowly until soft, pale golden, and sweet, about 20 minutes.

    Let the onions cool slightly, then mix them with the eggs, pepper, nutmeg, and flour or matzo meal.

    Spread the onion filling into the prepared crust.

    Bake until the filling is set and the crust is lightly browned, 35 to 45 minutes.

    Cool for at least 10 minutes before slicing and serving warm or at room temperature.

Kosher notes

Use an oil-based crust and no cream or bacon to keep the tart pareve and kosher.
