A hearty layered Hungarian potato casserole of boiled potatoes, hard-boiled eggs, onions, and sour cream. In Jewish versions it functions as a filling dairy meal or side, baked until creamy and lightly browned.

Ingredients

  • 2 1/2 lb Yukon Gold or waxy potatoes
  • 6 large eggs
  • 2 medium onions, thinly sliced
  • 2 tbsp vegetable oil or butter
  • 2 cups sour cream
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp sweet paprika
  • 2 tbsp breadcrumbs for the pan

Instructions

    Boil the potatoes in their skins until just tender, cool, peel, and slice into rounds.

    Hard-boil the eggs, cool them, peel, and slice.

    Cook the onions in oil or butter until soft and lightly golden.

    Grease a baking dish and dust lightly with breadcrumbs.

    Layer half the potatoes in the dish, season with salt, pepper, and paprika, then add half the eggs and half the onions.

    Spread some sour cream over the layer and repeat with the remaining potatoes, eggs, onions, and more sour cream.

    Finish with a generous top layer of sour cream and a dusting of paprika.

    Bake at 375°F (190°C) for 35 to 40 minutes until bubbling and golden at the edges.

    Rest for 10 minutes before serving.

Kosher notes

Because of the sour cream and eggs, this version is dairy; do not serve with meat.
