Roasted Chicken with Farfel

עוף צלוי עם פארפל

United StatesAshkenaziShabbat Meat 110 min 6 servings Easy

A classic Sabbath meal in which roast chicken is served over farfel, the toasted broken noodles or matzo bits that absorb the bird's savory juices. It is comforting, practical, and deeply associated with Ashkenazi home cooking.

Ingredients

  • •1 whole kosher chicken, about 4 lb
  • •2 tbsp schmaltz or oil
  • •2 tsp kosher salt
  • •1 tsp black pepper
  • •1 tsp paprika
  • •2 cups farfel
  • •1 small onion, chopped
  • •3 cups chicken broth
  • •2 tbsp chopped parsley

Instructions

  1. 1

Pat the chicken dry and rub it with schmaltz or oil, salt, pepper, and paprika.

  2. 2

Roast the chicken at 400°F (200°C) until golden and cooked through, basting once or twice.

  3. 3

Meanwhile, toast the farfel in a skillet with a little schmaltz until lightly browned and nutty.

  4. 4

Add the chopped onion and cook until softened.

  5. 5

Pour in the chicken broth, cover, and simmer until the farfel is tender and has absorbed most of the liquid.

  6. 6

Fluff the farfel and stir in parsley.

  7. 7

Let the chicken rest, then carve it into serving pieces.

  8. 8

Serve the roast chicken over the farfel so it can soak up the pan juices.

Kosher notes

Because schmaltz and chicken broth are used, this is a meat dish; matzo farfel may be substituted during Passover if appropriate.
