A fragrant herb rice made with basmati and a generous mix of parsley, dill, cilantro, and chives. It is especially associated with festive tables and is often served with fish.

Ingredients

  • 2 cups basmati rice
  • 1/2 cup chopped parsley
  • 1/2 cup chopped dill
  • 1/2 cup chopped cilantro
  • 1/4 cup chopped chives or green onion greens
  • 3 tablespoons oil
  • 1 1/2 teaspoons kosher salt

Instructions

    Rinse the rice well and soak briefly if desired.

    Bring a large pot of salted water to a boil and parboil the rice until partly cooked; drain.

    Mix the chopped herbs together in a bowl.

    Spread a little oil in a pot, add a layer of rice, then sprinkle some herbs; repeat to use all the rice and herbs.

    Cover the lid with a towel, place it on the pot, and steam over low heat until the rice is fluffy and aromatic, about 30 minutes.

    Gently toss to distribute the herbs before serving.

Kosher notes

Pareve as written and appropriate alongside fish or meat. Many families serve it for festive meals.
