A richly spiced Ethiopian Jewish Sabbath chicken stew, often served with hard-boiled eggs and injera.
Ingredients
- •2 pounds chicken pieces
- •4 hard-boiled eggs
- •2 large onions, finely chopped
- •4 garlic cloves, minced
- •1 tablespoon grated ginger
- •2 tablespoons berbere seasoning
- •3 tablespoons oil
- •1 1/2 teaspoons kosher salt
- •1 cup water
Instructions

Cook the onions slowly in oil until deeply softened and reduced.

Add garlic, ginger, and berbere and cook until fragrant.

Add the chicken pieces and salt and stir to coat well in the spiced onion base.

Pour in the water, cover, and simmer until the chicken is very tender.

Add the peeled hard-boiled eggs near the end so they absorb the sauce, then serve hot.
Kosher notes
Use kosher chicken and eggs; serve with pareve injera.
