Sarde in Saor

Sarde in Saor

Venice, ItalyItalianEveryday Pareve 50 min 6 servings Medium

A Venetian Jewish-style sweet-and-sour sardine dish rooted in older preservation methods. Fried sardines are layered with slowly cooked onions, raisins, pine nuts, and vinegar, then left to marinate until the flavors mellow and deepen.

Ingredients

  • •1 1/2 lb fresh sardines, cleaned
  • •1/2 cup flour, for dusting
  • •1/2 cup olive oil, for frying
  • •3 large onions, thinly sliced
  • •1/4 cup raisins
  • •1/4 cup pine nuts
  • •1/3 cup white wine vinegar
  • •1 tsp kosher salt
  • •1/2 tsp black pepper

Instructions

  1. 1

Lightly dust the cleaned sardines with flour and season them with a little salt.

  2. 2

Heat part of the olive oil in a skillet and fry the sardines until just golden, then drain them well.

  3. 3

In another pan, cook the onions slowly in the remaining oil until very soft and lightly caramelized.

  4. 4

Add the raisins, pine nuts, vinegar, pepper, and the remaining salt, and simmer briefly to blend the sweet-and-sour flavors.

  5. 5

Arrange a layer of sardines in a shallow dish.

  6. 6

Cover with a layer of the onion mixture and repeat until everything is used.

  7. 7

Let the dish cool, then refrigerate for several hours or overnight to marinate.

  8. 8

Bring to room temperature before serving.
