Sarde in Saor

Venetian sweet-and-sour sardines layered with onions, raisins, pine nuts, and vinegar. In Jewish and broader Venetian cooking, the dish reflects medieval preservation methods and develops even better after marinating.

Ingredients

  • 1 1/2 pounds fresh sardines, cleaned
  • 1/2 cup flour, for dredging
  • 4 large onions, thinly sliced
  • 1/3 cup raisins
  • 1/4 cup pine nuts
  • 1/2 cup white wine vinegar
  • 1/2 cup extra-virgin olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

    Soak the raisins in warm water for 10 minutes, then drain.

    Lightly dredge the sardines in flour and season with a little salt and pepper.

    Heat part of the olive oil in a skillet and fry the sardines briefly until golden; set aside.

    In the same pan, add more oil if needed and cook the onions slowly until very soft and sweet.

    Add the vinegar, raisins, pine nuts, salt, and pepper, and simmer for a few minutes.

    In a shallow dish, layer some onion mixture, then some sardines, repeating until all are used.

    Pour any remaining pan sauce over the top.

    Cool, cover, and marinate in the refrigerator for at least several hours or overnight before serving.

Kosher notes

Fish is pareve, so this dish can accompany either meat or dairy meals. Use kosher wine vinegar and clean fish carefully according to local kosher standards.
