Sellou (Sfouf)
سلو
A dense, aromatic Moroccan confection made from browned flour, toasted nuts and seeds, warm spices, honey, and oil. In Jewish homes it is valued as an energizing treat that keeps well and is often shaped into mounds or balls.
Ingredients
- •2 cups all-purpose flour
- •1 cup toasted almonds
- •1/2 cup toasted sesame seeds
- •1/2 cup honey
- •1/3 cup neutral oil or melted olive oil
- •1 tsp ground cinnamon
- •1/2 tsp ground anise
- •1/4 tsp ground nutmeg, optional
- •1/4 tsp kosher salt
- •Powdered sugar, for dusting
Instructions

Toast the flour in a dry skillet or low oven, stirring often, until golden brown and fragrant, then let it cool.

Grind the toasted almonds and sesame seeds to a coarse meal.

In a large bowl combine the browned flour, ground nuts and seeds, cinnamon, anise, nutmeg if using, and salt.

Warm the honey and oil slightly until fluid, then pour them into the dry mixture.

Mix thoroughly with your hands or a spoon until the mixture becomes sandy but holds together when pressed.

Adjust with a little more oil or honey if the mixture seems too dry.

Press into a serving dish, shape into mounds, or roll into small balls.

Dust with powdered sugar and serve at room temperature.
Kosher notes
Naturally pareve when made with oil. Store in a sealed container and serve with either meat or dairy meals.
