A creamy Persian rice pudding perfumed with saffron and rosewater. It is particularly suitable for Shavuot and other dairy-centered occasions.

Ingredients

  • 1/2 cup rice
  • 4 cups whole milk
  • 1 cup water
  • 1/3 cup sugar
  • 1/4 teaspoon saffron threads, bloomed in hot water
  • 1 tablespoon rosewater
  • 1 pinch ground cardamom, optional
  • 2 tablespoons chopped pistachios, for garnish

Instructions

    Rinse the rice and place it in a saucepan with the water.

    Cook over medium-low heat until the rice softens and most of the water is absorbed.

    Add the milk and simmer gently, stirring often, until the rice is very tender and the mixture thickens.

    Stir in the sugar, saffron water, rosewater, and optional cardamom.

    Cook a few minutes more until silky and creamy.

    Serve warm or chilled, garnished with pistachios.

Kosher notes

Dairy dish. Use kosher milk and ensure rosewater is kosher-certified if purchased.
