A creamy salted milk tea central to Bukharan hospitality. It may be made with green or black tea and is sometimes enriched with butter or nuts, producing a warming, nourishing drink.

Ingredients

  • 2 tsp green or black tea leaves
  • 3 cups water
  • 2 cups whole milk
  • 1/2 tsp kosher salt
  • 1 tbsp unsalted butter, optional
  • 2 tbsp chopped nuts, optional

Instructions

    Bring the water to a boil in a saucepan.

    Add the tea leaves and boil briefly until the infusion becomes strong and dark.

    Pour in the milk and add the salt.

    Reduce the heat and simmer gently, stirring occasionally, until the tea takes on a creamy color and unified flavor.

    If using butter, stir it in until melted.

    Strain the tea into cups or bowls to remove the leaves.

    Top with chopped nuts if desired.

    Serve hot as a comforting drink and gesture of hospitality.

Kosher notes

A dairy preparation because of the milk and optional butter. Serve apart from meat meals in accordance with kashrut.
