A garlicky cold rice dish prepared ahead for Shabbat, when Bukharan Jews avoided cooking and served foods that could be eaten at room temperature or cold. Its strong garlic flavor is one of its signatures.

Ingredients

  • 2 cups long-grain rice
  • 4 cups water
  • 1 1/2 tsp kosher salt
  • 8 cloves garlic, crushed to a paste
  • 3 tbsp neutral oil
  • 1/2 tsp black pepper
  • 1 tbsp chopped fresh dill or cilantro, optional

Instructions

    Rinse the rice several times until the water runs mostly clear.

    Bring the water and salt to a boil in a medium pot.

    Add the rice, reduce to a simmer, and cook until the grains are tender and the water is absorbed.

    Meanwhile, mix the crushed garlic with the oil and black pepper to form a strongly flavored dressing.

    Fluff the cooked rice gently with a fork and fold in the garlic mixture while the rice is still warm.

    Taste and adjust the seasoning, adding more salt if needed.

    Spread the rice on a tray or in a shallow dish to cool quickly and evenly.

    Cover and chill or hold at room temperature, then serve cold on Shabbat.

Kosher notes

Naturally pareve and suitable for Shabbat preparation when made before the onset of the holiday. Check that no meat or dairy utensils affect intended use.
