A classic Moroccan Sephardic overnight Shabbat stew of beef, chickpeas, potatoes, sweet potatoes, eggs, and warming spices. The dish is assembled before sundown and cooked slowly until the meat is tender, the eggs turn brown, and the flavors become rich and deeply savory.

Ingredients

  • 2 lb beef arm roast or beef shank, cut in large pieces
  • 2 cups dried chickpeas, soaked overnight
  • 4 medium potatoes, peeled
  • 2 medium sweet potatoes, peeled
  • 6 whole eggs, unpeeled
  • 1 large onion, sliced
  • 8 garlic cloves
  • 1/2 cup wheat berries or pearl barley, tied in cheesecloth (optional)
  • 2 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp turmeric
  • 1 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 3 tbsp olive oil
  • 8 cups water

Instructions

    Heat the olive oil in a heavy pot and lightly soften the onion and garlic.

    Layer in the beef, chickpeas, potatoes, sweet potatoes, and the cheesecloth bundle of grains if using.

    Sprinkle with cumin, cinnamon, turmeric, salt, and pepper, then nestle the whole eggs on top.

    Add the water to just cover the contents, bring to a gentle simmer, and skim any foam.

    Cover tightly and cook in a very low oven or on a covered hotplate overnight, 12 to 15 hours, adding a little water if needed.

    Serve the meat, vegetables, chickpeas, grains, and the brown Shabbat eggs with broth spooned over the top.

Kosher notes

Prepared before Shabbat so no fire needs to be lit on the Sabbath. Meat and eggs are used together, with no dairy.
