Sopa de Ajo

A humble Sephardic garlic soup made from olive oil, garlic, stale bread, paprika, and sometimes egg. It embodies Iberian Jewish thrift and the centrality of garlic and olive oil in the Sephardic pantry.

Ingredients

  • 6 garlic cloves, thinly sliced
  • 4 cups stale rustic bread, torn or sliced
  • 3 tbsp olive oil
  • 1 tsp sweet paprika
  • 5 cups vegetable stock or water
  • 2 eggs, optional
  • 1 tsp kosher salt
  • 1/4 tsp black pepper

Instructions

    Heat the olive oil in a pot and gently cook the garlic until fragrant but not browned.

    Add the bread and toss it in the oil so it absorbs the garlicky flavor.

    Sprinkle in the paprika, salt, and pepper and stir quickly.

    Pour in the stock or water and simmer until the bread softens and the soup thickens slightly.

    If using eggs, crack them into the simmering soup and poach briefly.

    Serve hot with an extra drizzle of olive oil.

Kosher notes

Naturally pareve when made with water or vegetable stock; eggs remain pareve in kosher classification. Avoid meat stock if serving with dairy.
