TurkeySephardiRosh Hashana Pareve Medium

A unique Sephardic beverage made from dried, ground melon seeds, traditionally served to break the fast of Yom Kippur or during Rosh Hashana.

Ingredients

  • 1 cup dried melon seeds
  • 4 cups water
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 2 tbsp lemon juice

Instructions

    Rinse the dried melon seeds thoroughly under cold water.

    Soak the rinsed melon seeds in water overnight to soften them.

    After soaking, drain and place the seeds in a blender with 4 cups of fresh water.

    Blend until smooth, creating a fine milk-like consistency.

    Strain the mixture through a cheesecloth into a large bowl to separate the liquid from the solids.

    Add sugar, vanilla extract, cinnamon, and lemon juice to the strained liquid, stirring until the sugar is dissolved.

    Chill the beverage in the refrigerator for a few hours before serving.

    Serve in small glasses, garnishing with a sprinkle of cinnamon if desired.
