Roman fried rice balls linked to the ghetto and later popularized as street food. This version uses a cheese center, though historical versions could also be made with meat.

Ingredients

  • 2 cups Arborio rice
  • 4 cups vegetable broth or water
  • 1 cup tomato sauce
  • 2 tablespoons extra-virgin olive oil
  • 1/2 cup grated kosher hard cheese
  • 8 ounces mozzarella, cut into small cubes
  • 2 large eggs
  • 1 1/2 cups breadcrumbs
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • neutral oil, for frying

Instructions

    Cook the rice in the broth until tender and most of the liquid is absorbed.

    Stir in the tomato sauce, olive oil, grated cheese, salt, and pepper, then spread the rice on a tray to cool completely.

    Once cool, moisten your hands and take a scoop of rice, flattening it in your palm.

    Place a cube or two of mozzarella in the center and shape the rice around it into an oval ball.

    Beat the eggs in one bowl and place the breadcrumbs in another.

    Dip each rice ball in egg, then coat thoroughly in breadcrumbs.

    Heat frying oil to about 350°F/175°C and fry the supplì in batches until deep golden and crisp.

    Drain on paper towels and serve hot so the cheese center stays molten.

Kosher notes

This version is dairy because of the cheese filling. For a meat meal, use a meat filling and omit dairy ingredients, maintaining separate utensils and frying oil.
