Sweet Noodle Kugel
Lokshen Kugel
A traditional sweet noodle kugel preserved by survivor networks in postwar Paris. Made with egg noodles, eggs, sugar, and raisins, it can function as a side dish or simple dessert for Shabbat.
Ingredients
- •12 oz egg noodles
- •4 large eggs
- •1/2 cup sugar
- •1/4 cup neutral oil
- •1 cup raisins
- •1 tsp vanilla extract
- •1 tsp ground cinnamon
- •1/2 tsp kosher salt

Preheat the oven to 350°F (175°C) and grease a medium baking dish.

Cook the egg noodles until tender, then drain well.

In a large bowl, whisk together the eggs, sugar, oil, vanilla, cinnamon, and salt.

Fold in the cooked noodles and raisins until everything is evenly coated.

Transfer the mixture to the baking dish and smooth the top.

Bake for 40 to 45 minutes, until the top is set and lightly caramelized.

Let cool slightly before cutting into squares and serving warm or at room temperature.
Kosher notes
This version is conveniently pareve and can be served with a Shabbat meat meal; some families make dairy versions instead.
