Szilvás Pite(Plum Cake)

A seasonal Hungarian Jewish plum cake or slab pie, often made with a yeasted or short crust and topped with halved Italian prune plums. It is strongly associated with the autumn harvest and holiday tables, especially around Rosh Hashanah and Sukkot.

Ingredients

  • 3 cups all-purpose flour
  • 2 1/4 tsp active dry yeast
  • 3/4 cup warm water
  • 1/4 cup sugar
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/2 tsp kosher salt
  • 1 1/2 lb Italian prune plums, halved and pitted
  • 2 tbsp breadcrumbs or ground nuts
  • 2 tbsp sugar for topping
  • 1 tsp cinnamon

Instructions

    Dissolve the yeast in the warm water with a pinch of the sugar and let stand until foamy.

    Mix in the remaining sugar, oil, egg, salt, and flour to form a soft dough, then knead until smooth.

    Place the dough in an oiled bowl, cover, and let rise until doubled, about 1 hour.

    Press the dough into a greased sheet pan or rectangular baking dish and sprinkle the surface lightly with breadcrumbs or ground nuts to absorb juices.

    Arrange the plum halves cut side up over the dough in close rows.

    Sprinkle with the topping sugar and cinnamon.

    Bake at 375°F (190°C) for 35 to 40 minutes until the crust is golden and the plums are soft and jammy.

    Cool until warm or room temperature before cutting into squares.

Kosher notes

A pareve version is ideal for holiday meals; use oil rather than butter so it can follow a meat meal.
