Taramosalata

A smooth Greek dip made from fish roe, bread, olive oil, and lemon, served as a meze and adapted easily to kosher fish meals.

Ingredients

  • 3 ounces carp or cod roe
  • 2 cups day-old bread, crusts removed
  • 1/3 cup lemon juice
  • 1/2 cup olive oil
  • 1 garlic clove
  • 1/4 cup cold water
  • 1/4 teaspoon white pepper

Instructions

    Soak the bread briefly in water, then squeeze it dry.

    Blend the roe, bread, garlic, lemon juice, and pepper until smooth.

    With the motor running, drizzle in the olive oil and enough water to make a creamy dip.

    Taste and adjust lemon or saltiness as needed.

    Chill and serve with vegetables or bread.

Kosher notes

Use kosher-certified fish roe; fish dishes are commonly treated as pareve in menu planning but should not be cooked with meat.
