Traditional Cairo-style pickled turnips, sometimes made with cauliflower or carrots, notable for a finishing layer of olive oil that seals the jar, mellows acidity, and helps prevent spoilage.

Ingredients

  • 4 medium turnips, peeled and cut into batons
  • 1 small carrot, sliced
  • 1 cup cauliflower florets
  • 1 1/2 cups water
  • 1 cup white vinegar
  • 1 tablespoon kosher salt
  • 1 teaspoon sugar
  • 3 cloves garlic, sliced
  • 1/4 teaspoon red pepper flakes
  • 3 tablespoons olive oil

Instructions

    Wash and cut the turnips, carrot, and cauliflower into bite-size pieces.

    Pack the vegetables into a clean glass jar with the garlic and red pepper flakes.

    In a small saucepan, heat the water, vinegar, salt, and sugar just until the salt dissolves.

    Let the brine cool slightly, then pour it over the vegetables, making sure they are submerged.

    Pour the olive oil over the top to create the traditional sealing layer.

    Close the jar and refrigerate or keep in a cool place for 3 to 5 days before eating.

    Turn the jar gently once a day to distribute the brine without breaking the oil seal too much.

    Serve as a sharp, oil-rich accompaniment to meat dishes, beans, or sandwiches.

Kosher notes

Naturally pareve and suitable with either meat or dairy meals when prepared in clean jars and utensils.
