Zoulbia
زولبیا
A lacy, spiral-shaped fried sweet soaked in rosewater-cardamom syrup. Its fried nature makes it especially appropriate for Hanukkah in the context given by the source file.
Ingredients
- •1 cup all-purpose flour
- •1 teaspoon instant yeast
- •1 tablespoon cornstarch
- •3/4 cup warm water
- •1 teaspoon sugar
- •Oil, for deep frying
- •1 cup sugar
- •1/2 cup water
- •1 tablespoon rosewater
- •1/4 teaspoon ground cardamom
- •1 teaspoon lemon juice
Instructions
- 1
Make the syrup first by simmering the sugar, water, rosewater, cardamom, and lemon juice until slightly thickened; cool until warm.
- 2
In a bowl, whisk together the flour, yeast, cornstarch, sugar, and warm water into a smooth batter.
- 3
Cover and let the batter ferment until bubbly, about 45 to 60 minutes.
- 4
Heat 2 inches of oil in a deep pan to medium heat.
- 5
Transfer the batter to a squeeze bottle or piping bag and pipe spirals directly into the oil.
- 6
Fry until crisp and golden, turning once if needed.
- 7
Lift out and immediately dip or drizzle with the scented syrup.
- 8
Let excess syrup drip off before serving.
